Banana Cupcake

Not too long ago, Our Arts teacher announced the class that we will be making our own exhibit based on the form of art that the group is responsible too. I, together with my other groupmates, am in the Culinary group while the others are from the different forms of art (such as Architecture, Literature, Visual Arts and so much more).  As a Health-Allied student, we researched more information about some nutritious food that will benefit the students by tasting the food that we will be making. Well I suggested “Why not Banana?”. I thought  Bananas are one of the essential fruits that we must eat because it contains Vitamins and Minerals that will keep us away from diseases such as constipation and deficiencies. Gladly, Everyone in our group agreed on so we make Banana as our main dish in our food plan. Suddenly, one of our groupmates said that “Let’s make some Banana Cupcakes with Buttercream-Lite Frosting”.What makes our group work fast was that every suggestion that was said were all agreed upon. Until such then, we also came up with a theme, which is Minions.As a result, we came up with a  Minion Themed Exhibit filled with Mini Banana Cupcakes with Buttercream-Lite Frosting for the upcoming exhibit, which already happened. Here are some photos that I  and my fellow classmates took during our Exhibit:

These are my group mates from the Culinary group. Honestly, they are the people who really managed well in the making of our exhibit (from calling people to conducting good etiquette to the people around). This exhibit won’t happen well without them! Thank you guys! ❤❤

Moving on, I am going to show to you my recipe in making these nutritious Banana Cupcake, feel free to try them if you are interested.


Banana Muffin with Buttercream-Lite Frosting
(Yield: 12 regular cupcakes or 24 mini-sized cupcakes)
1 1/2 cups flour
1 cup sugar (you can also use brown sugar as a subtitute)
1 teaspoons baking powder
½ teaspoon of baking sodea
2 eggs
pinch of salt
1 stick butter, softened (112g)
½ cup of banana, mashed (approx.. 3 large bananas)
1 teaspoons vanilla extract
Preheat the oven at 350°F, Lined 12 cupcake liners in the cupcake pans. Combine flour, salt, baking soda and baking powder in a mixing bowl; set aside.. Whisk together eggs and add butter and sugar. Fold mashed banana and vanilla into eggmixture. Gently fold in the flour mixture into the wet mixture until incorporated. Using an ice cream scoop, scoop the mixture in each of the cupcake liners in the tray. Bake the cupcakes for 18-22 minutes. Remove the tray from the oven when a toothpick is inserted in the center of the cupcake comes out clean. Let it cool for 10 minutes before frosting

Buttercream-Lite Frosting
½ cup of butter, softened
½ cup of icing sugar
½ teaspoon of vanilla extract
½ cup of Yougurt
Minion Themed Food Colorings (Blue,Yellow or Violet depending on your choice)

Beat the butter until it is pale and creamy then add in the icing sugar until it is combined. Add in the yougurt and vanilla extract then beat until it is light and creamy. Add the Minion-Themed Food Coloring of your choice, then mix until incorporated

Put the frosting into the pipping bag with an icing tip (depending on your choice).Swirl around the of the cupcake.
