K-pop Themed Cupcakes

Another “It’s been a while” post for my blog. I never posted blogs for two months because it’s been a rough day in our school filled with tons of paperwork and project over and over again. Furthermore, I have also baked orders for consecutive weeks for our Entrepreneurship subject which was really a tough decision as I sacrifice my academics but it was manageable.  Nevertheless, Thanks to K-pop groups! They really give me some motivation on the things I do despite stressing it over. In addition, these groups really made me happy whenever they have new comebacks. I really applaud them for being the best groups around Korea since the time I was studying in grade school. I never thought that I can let our preliminary slide off as I overcome different conflicts and challenges for this year.  It was happy to be back home as the living atmosphere that I want tends to move into me. To be honest, I really miss everything ever since I wasn’t around at our home for two months. The freedom is surreal! It was such a blessing to have my family at home as we celebrate this upcoming Holy Week.

Moving on, I have never been baking new creations because of school but in this blog, I will be posting my new creations! If you are a real K-pop fan of ONCE and EXOL, these treats are for you- so am I since I am a certified EXOL and ONCE! I’ve been looking forward to them through all their projects since then as I admire them for who they are! In honor of their upcoming mini album of EXO-CBX and ONCE (which is “What is Love”) on April 9 and 10 respectively! Here’s to my K-pop themed Cupcakes inspired by them!

Together ONCE and EXOL! We Unite

Twice and EXO topper:
½ cup of white chocolate
½ cup of dark chocolate

Recipe (Cupcakes)
½ cup of unsalted butter, softened
¾ of granulated sugar
1 whole egg
1 tsp of vanilla extra
1 ¼ cup of all-purpose flour
½ tsp of baking soda (also known as “bicarbonate soda”)
⅛ tsp of salt
½ cup of milk
For Red Velvet Cupcake: add 1 tbsp of cocoa powder+ 2 tbsp of red food coloring gel
For Chocolate Cupcake: add ¼ cup of cocoa powder

For Twice and EXO topper:
½ cup of white chocolate
½ cup of dark chocolate
Procedure: (Topper):
1. In a two small bowl, microwave both white chocolate and dark chocolate for 30 seconds until melted.
2. Use a piping bag to pipe out the mixture onto the template that is placed with parchment paper
3. Let it freeze for 30 seconds until firm

Procedure: (Cupcakes)
1. Preheat the oven to 350ºF, Line 24-35 mini muffin liners int the mini muffin pan (or 6-`12 muffin liners into a regular muffin tin)
1. In a large mixing bowl, Beat the butter and sugar until incorporated then add the egg and mix until combined.
2. Add the vanilla extract then beat ita gain until combined.
3. In a separate mixing bowl, Sift the flour, baking soda, and salt, Whisk until everything is well-combined.
4. In an alternative process, mix half of the dry ingredients into the wet mixture, Mix until combined then add the half of the milk (Repeat the process until all ingredients are well-mixed)
5. For regular-size cupcakes: Use an ice cream scooper to scoop out the batter evenly on to the muffin tins
For mini-size cupcakes: Use a teaspoon to scoop out the batter evenly on to the muffin tin
6. Bake the cupcakes for 15-18 minutes on regular cupcakes and 8-10 minutes for mini cupcakes.
7. Cool the cupcakes before frosting your favorite icing.

Assembly:
1. Forst your desired icing onto the cupcake
2. Place the topper on the frosting and press it a little bit to stick into the frosting
3. Voila! Enjoy your K-pop themed cupcakes!
